Yes, the kitchen is expanding, however, the expansion is primarily a bar called The Bramble.

Tallgrass Prairie Table, 313 E. Second St., has started a kitchen expansion and the build-out of a next-door bar to be called The Bramble.

The restaurant also is taking names on a waiting list for a “Tractor Dinner” to benefit its partner farm, Living Kitchen Farm & Dairy.

“We are adding a protein room where we will have our own butchery, and the rest of the space will be used for The Bramble,” owner Hope Egan said. “The Bramble will be a speakeasy-style bar featuring farm-to-bar craft cocktails.”

She said she hopes to have The Bramble open in 60 to 90 days.

I had a maple/bacon infused old fashioned there one time.  Not exactly my thing, but wasn't bad.  I could see stuff like that, if they sourced the products locally.  Also, where do the state vodka distillers and beer brewers get their raw materials?  If they are local crops, that would a pretty cool marketing slant.

I'm not sure how big of a crop barley is in Oklahoma, but a lot of Colorado brewers are doing just what you suggested as well as growing their own hops.

We don't have much barley.  There has been some interest in a hull-less variety, but don't think it's getting much traction yet.
